Step Up Scale Down is a 12-week educational program based on the USDA Dietary Guidelines, which help
Americans choose a healthful eating plan within their calorie requirements to achieve and maintain a healthy
weight. The Dietary Guidelines provide sound scientific information about how proper dietary habits can promote
health and reduce risk for major chronic diseases.
WEEK 1: Scale Down by Setting Goals
The class schedule is as follows:
• A 15-minute check-in to include a confidential weigh-in and Dinner Tonight recipe video demonstration.
• A 20- to 30-minute lesson incorporating a variety of topics targeting healthy eating habits and increasing
physical activity and motivation.
• A 5-minute weekly challenge with a take-away tool to include in the daily routine. The challenge will include
an activity related to the lesson, along with an optional weekly 5K training plan for beginner and intermediate
runners.
